Onion Cake Basic Recipe

Onion cake is simply a fall staple. Here’s a classic recipe from Spoonsparrow.

Ingredients

  • 500 g spelt flour
  • Salt
  • 20 g yeast (½ cube)
  • 250 ml lukewarm milk (3.5% fat)
  • 60 g Butter
  • 1 kg onions
  • 150 g bacon
  • 3 eggs
  • 250 g sour cream
  • Pepper
  • 1 tsp Caraway seeds

Instructions

    Mix flour with salt in a bowl, press a well in the center, crumble yeast into it and stir with half the milk. Cover and let rise for 20 minutes. Melt butter in the remaining milk, add to the dough, whisk until the dough lifts from the bowl. Cover and let rise for 1 hour.

    Peel onions and slice them into strips. Dice bacon and fry in a hot pan over medium heat. Add onions and sauté until translucent, then let cool. Beat eggs with sour cream, season with salt, pepper, and caraway seeds, and mix in the cooled onions.

    Roll out the dough. Line a baking tray with parchment paper and place the dough on it, forming a small edge. Spread the bacon‑onion mixture over the dough. Bake the onion cake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 35–40 minutes until golden brown.
