Onion Bacon Quiche

Ingredients

  • 200 g Flour
  • 100 g cold butter
  • 1 egg yolk
  • Salt
  • 4 onions
  • 250 g diced bacon
  • 2 tbsp sunflower oil
  • 0.5 tsp caraway seeds
  • 4 eggs
  • 200 ml whipping cream
  • 200 ml milk
  • 75 g Gruyère cheese
  • black pepper
  • nutmeg

Instructions

    Sift the flour and cut the butter into cubes. Mix both with the egg yolk, 3–5 tbsp cold water and salt to form a smooth dough; wrap in cling film and chill for 30 minutes.

    Peel and slice the onions into thin rings. Dice the bacon. Heat oil in a large pan, sauté the bacon and onions over medium heat for about 5 minutes, add caraway seeds, then remove from the pan.

    Preheat the oven to 200 °C fan‑forced and line a springform pan with parchment paper.

    Roll out the dough on a floured surface, place it in the pan, shaping a rim of about 4 cm. Distribute the bacon–onion mixture over the dough.

    Whisk together the eggs, cream, milk and Gruyère; season with salt, pepper and nutmeg, then pour over the bacon–onions. Bake the quiche for about 45 minutes until golden brown.
