Grandma's Flammkuchen
We love flammkuchen! Try Grandma’s Flammkuchen à la Spoonsparrow!
Ingredients
- 21 g fresh yeast (0.5 cube of fresh yeast)
- 250 g wheat flour type 1050
- 0.5 tsp Salt
- 2 onions
- 100 g turkey bacon
- 1 tbsp Rapeseed Oil
- 200 g Sour Cream
- 1 egg yolk
- ground pepper
- nutmeg
Instructions

Dissolve the yeast in 125 ml lukewarm water. Mix the flour with the salt and make a well in the center. Pour the yeast mixture into the well, gradually incorporating the flour until a smooth dough forms. Cover the dough with a cloth and let it rise in a warm place for about 60 minutes.

Roll out the dough very thinly and line a baking tray with it. Prick it several times with a fork.

Peel and chop the onions. Dice the bacon finely. Heat oil in a pan and sauté the onions and bacon until translucent.

Whisk the sour cream with the egg yolk. Season with salt, pepper, and nutmeg, then spread over the dough. Distribute the onions and bacon on top. Bake in a preheated oven at 240 °C (220 °C fan; gas: highest setting) for about 15 minutes until golden brown. Cut Grandma’s Flammkuchen into pieces and serve immediately.
