Ingredients
- 800 g onions
- 2 EL Butter
- 2 EL flour
- 150 ml dry white wine
- 150 ml whipping cream
- 650 ml poultry broth (or vegetable broth)
- 2 Garlic cloves
- 60 g melting cheese (cream)
- 1 EL fresh chopped dill
- 1 TL lemon juice
- muskat (freshly grated nutmeg)
- Salt
- pepper (from the mill)

Peel and slice the onions into strips. Heat butter in a pot and slowly sauté the onions, stirring until soft but colorless. Sprinkle flour, cook until translucent, then deglaze with wine, cream, and broth. Bring to a boil and simmer for about 15 minutes. Peel garlic cloves and press them into the soup, add cheese and allow it to melt. Finally stir in dill and season the soup with lemon juice, nutmeg, salt, and pepper.
