Asian Beef Soup

Ingredients
- 500 g beef (e.g., brisket)
- 1 star anise
- 1 tsp Sichuan peppercorns
- 0.5 cinnamon stick
- 1 tsp fennel seeds
- 350 g Chinese noodles
- 2 red chili peppers
- 4 spring onions (only the green and light green parts)
- 2 handfuls herbs (parsley and cilantro leaves)
- 1 tsp freshly grated ginger
- 2 tbsp Soy sauce
- lime juice
- Salt
- 1 tbsp Sesame seeds

Wash and pat dry the beef. In a pot, bring about 2 l of water to a boil. Add the star anise, Sichuan peppercorns, cinnamon, fennel, and the beef. The beef should be covered by water and then simmer gently for about 2 hours. Remove the cooked beef from the broth, let it cool, then slice into thin strips. Strain the soup through a sieve.

Wash, trim, and cut the chili peppers into rings. Wash, trim, and finely chop the spring onions. Rinse the herbs, shake dry, and cut into fine strips.

Bring about 1 l of broth to a boil, add the spring onions, herbs, ginger, and chili. Season with soy sauce, lime juice, and salt.

Arrange the sliced beef decoratively in soup bowls, pour the hot broth over it carefully, and sprinkle with sesame seeds before serving.
