- 4 tbsp butter
- 250 g fine flour
- 2 Eggs
- 375 ml milk
- 125 ml sparkling water
- butter (for frying)
- powdered sugar (for dusting)

Let the butter melt over low heat. Whisk the flour with the eggs thoroughly in a bowl, gradually adding milk and water while stirring. Beat in the butter and let the batter rest for about 30 minutes.

Add some butter to a hot pan and pour a little batter into it. Swirl the pan to spread the batter thinly as quickly as possible. Cook until set, flip and cook the second side golden brown. In this way bake all the batter into feather‑thin crêpes. Stack the finished crêpes as desired and serve dusted with powdered sugar.
