Ingredients

  • 4 paprika peppers (red and green)
  • 200 g white beetroot
  • Salt
  • 8 eggs
  • 4 tbsp heavy cream
  • 2 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 75 g grated cheese (e.g. Emmental)

Instructions

    Preheat the oven to 180°C fan.

    Wash, trim and dice the paprika peppers. Peel and cube the beetroot, blanch in salted water for 2-3 minutes, then shock and drain well.

    Whisk the eggs with the cream and season with salt and pepper.

    Add the butter to a large hot pan (oven‑proof and rectangular if desired) and sauté the paprika cubes with the beetroot. Pour in the egg mixture and sprinkle with cheese. Bake in the oven for about 20 minutes until golden brown.

    Serve warm or cooled, cut into pieces.
