The Omelette by Spoonsparrow lands on the plate in no time – perfect for breakfast, lunch or dinner!
Ingredients
- 2 Eggs
- Salt
- Pepper (freshly ground)
- 1 tsp butter
- 10 g chives
- 40 g salad leaves (about a handful)
- 1 tbsp vinegar
- 1 tsp Olive oil

Wash the chives, shake dry and finely chop. Wash the salad, spin dry and set aside. Crack the eggs into a bowl, season with salt and pepper, and whisk well with a fork. Add a little butter to an omelette pan and melt over medium heat.

Pour the egg mixture in and stir with a fork until it starts to thicken. Let the evenly creamy batter glide into the front of the pan by slightly tilting it diagonally.

Lift the pan slightly and tap the handle with your fist so the omelette rolls along the rim, taking its typical shape. Gently slide the omelette onto a plate and garnish with chives. Toss the salad with vinegar and olive oil and serve as a side.
