Ingredients

  • 3 cloves garlic
  • 300 g green pitted olives
  • 6 anchovies (salted)
  • 1 tsp fresh lavender buds
  • 50 g capers
  • 50 g roasted pine nuts
  • 100 ml olive oil
  • 1 tbsp cognac
  • pepper (ground)

Instructions

    Peel the garlic and coarsely blend it with the olives, anchovies, lavender, capers, pine nuts, and olive oil.

    Season with cognac and pepper, then transfer to a jar. Seal tightly; keep for 2–3 weeks.
