Artichoke Pizza with Red Onions

- 300 g flour
- 1 tsp salt
- 20 g yeast
- 2 tbsp oil
- 2 tbsp olive oil
- 6 large artichokes
- Salt
- Pepper
- 2 Garlic cloves
- Lemon juice
- 2 red onions
- 200 g shredded pizza cheese

Mix flour and salt in a bowl and make a well. Stir the yeast into 75 ml lukewarm water and pour it into the flour well, mixing with a little flour. Cover and let rise for about 15 minutes, then knead everything with 75-90 ml lukewarm water into a relatively firm dough. Knead vigorously until the dough is smooth and elastic. Let the dough rise covered in a warm place for 30 minutes. Divide the dough into two portions and roll each into flat rounds.

Peel and finely chop the garlic. Peel the onions and cut them into thin rings. Clean the artichokes, remove the stems, scrape off the pith, and immediately submerge the artichoke hearts in lemon water. Remove, pat dry, slice or cut into pieces as desired, and sauté with the garlic in hot olive oil. Distribute half of the onion rings over the pizza bases. Season the artichokes with salt and pepper and also spread them over the pizza bases. Sprinkle the cheese on top and add the remaining onion rings. Bake the pizzas one after another in a preheated oven (220 °C fan‑heat, lower rack) for 15–20 minutes.
