Ingredients
- 5 eggs
- 100 g grated Parmesan
- 300 ml whipping cream
- Salt
- pepper (ground)
- 0.5 tsp dried thyme
- 80 g black olives (sliced)
- fresh thyme (for garnish)
Instructions

For the dough, quickly knead butter with 1 tsp salt, flour and 50 ml cold water into a smooth dough. Wrap the dough in plastic wrap as a ball and chill in the refrigerator for 1 hour.

Meanwhile whisk eggs, parmesan and cream together, season with salt, pepper and thyme. Preheat oven to 180°C (350°F) fan‑forced heat.

Butter a 28 cm springform pan, dust with flour, line with dough and form a rim. Pour the cheese mixture over the base and scatter olives on top. Bake for about 40 minutes until the filling is set and lightly browned. Garnish with fresh thyme.
