Ingredients
- 250 g hearty oats
- 125 g soft butter
- 100 g honey
- 0.5 Vanilla bean
- 0.5 tsp cinnamon
- 2 Eggs
- 0.5 tsp Baking powder
- 2 tbsp spelt whole‑grain flour
- 4 tbsp milk

Scrape out the vanilla bean pulp. Cream together butter, honey and vanilla pulp, add eggs and whisk until frothy. Then add the remaining ingredients, mix well and let rest for about 30 minutes.

Drop dough spoonfuls onto a parchment‑lined baking sheet with some space between them and bake the oatmeal cookies in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for about 15–20 minutes until golden brown.
