Ingredients
- 5 eggs
- 140 g sugar
- 1 pinch salt
- 100 g rice flour
- 40 ground pistachios
- 2 tbsp chopped pistachios
- 12 dried goji berries (for garnish)

Preheat the oven to 180°C. Place paper molds into a muffin tin.

Separate the eggs. Whisk the yolks with sugar until fluffy. Beat the whites with salt until stiff peaks form and fold into the yolk-sugar mixture. Sift in the flour, then add ground and chopped pistachios, gently folding everything into a smooth batter. Fill the molds and bake in the preheated oven for about 25 minutes.

Let them cool briefly in the molds, remove, and set on a cooling rack. Then release from the paper molds if desired and flip onto a plate. Garnish each with a goji berry before serving.
