Plum‑Almond Tart

Ingredients

  • 10 blue plums
  • 4 eggs
  • 75 g honey
  • 120 g spelt flour (Type 1050)
  • 25 g cornstarch
  • 0.5 tsp Baking powder
  • 50 g ground almond kernels
  • 250 ml Almond drink (Almond milk)
  • 1 pinch salt
  • Erythritol powdered sugar for dusting

Instructions

    Wash the plums, halve them and pit them.

    Separate the eggs. Beat the yolks with honey until fluffy. Mix flour with cornstarch, baking powder and almonds, then alternately fold in the almond drink into the egg mixture. Whisk the whites with a pinch of salt until stiff peaks form, then gently fold into the batter.

    Pour the dough into a tart pan and spread evenly. Arrange the plums cut‑side up on top. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 30 minutes. Remove the finished tart from the oven, let it cool, dust with erythritol powdered sugar and serve.
