Nut Sticks with Sugar Glaze

Ingredients
- 125 g ground hazelnuts
- 125 g ground walnuts
- 3 egg whites
- 1 pinch salt
- 2 tbsp vanilla sugar
- 100 g sugar
- 1 tsp gingerbread spice
- 100 g powdered sugar
- 1 tsp lemon juice
- 40 g roasted hazelnut flakes

Roast the ground nuts in a hot pan while stirring until fragrant. Remove from heat and let cool.

Preheat the oven to 140°C fan.

Beat the egg whites with salt until stiff peaks form. While whisking, slowly add vanilla sugar and sugar; then mix in roasted nuts with gingerbread spice and fold into batter. Fill a piping bag with a small nozzle and pipe 5-6 cm long, narrow strips onto one or two parchment-lined baking trays, leaving some space between them. Bake in the oven for 15‑20 minutes until lightly golden brown. Remove from oven and cool on the tray.

For decoration, whisk powdered sugar with lemon juice into a thick glaze and fill a small piping bag with a tiny nozzle. Pipe fine lines over the sticks and sprinkle with coarsely chopped hazelnut flakes. Let dry well.
