Nut Sesame Balls

Ingredients
- Plant oil (for greasing)
- 20 g peeled unsalted peanuts
- 20 g almonds
- 80 g Sesame seeds
- 200 g finely chopped jaggery (or raw cane sugar)
- 3 tbsp ghee
- 1 tsp ground cardamom

Brush a plate or baking sheet thinly with oil. Roughly chop the peanuts and almonds, then add them with the sesame to a hot pan. Stir over medium heat for about 5 minutes until golden brown and fragrant, then remove.

Add 125 ml water and the jaggery to the same pan. Cook over medium heat for 4-5 minutes until the jaggery is fully dissolved and the mixture begins to caramelize. Stir well and keep it from sticking to the sides to prevent burning.

Add the ghee, cardamom, and nut mix to the caramel and combine. Spread the mixture onto the greased surface and let it cool slightly. While still warm, take small portions and quickly shape them into 2-3 cm diameter balls. Work fast as the mixture will set when cold and become unworkable.
