Ingredients

  • 700 g turkey breast fillet
  • Salt
  • Pepper (freshly ground)
  • 60 g sun‑dried tomatoes
  • 150 g German butter cheese
  • 0.5 bunch Basil
  • 3 tsp pesto (jarred)
  • 3 tbsp olive oil
  • 200 g diced tomatoes with herbs (canned)
  • 200 ml vegetable broth
  • 2 tbsp sauce thickener

    Wash and pat turkey dry. Season both sides with salt and pepper. Drain sun‑dried tomatoes and chop. Dice cheese finely. Wash basil, shake off water, and finely slice. Lay a thin piece of turkey on the work surface and spread pesto evenly. Distribute tomatoes, cheese, and basil on top, leaving a border. Roll the meat tightly from one long side. Tie securely with kitchen twine. Heat fat in a roasting pan. Sear the roll roast all around until browned.

    Add diced tomatoes and broth to the pan. Simmer the roast for about 70 minutes over low heat. Remove and keep warm. Thicken the sauce, season with salt and pepper. Untie the twine, slice the roast, and serve with sauce. Pair with wide noodle strands tossed in finely chopped basil.
