Ingredients

  • 100 g Soft Butter
  • 80 g sugar
  • 50 g Brown sugar
  • 1 egg
  • 1 vanilla bean (pulp)
  • 175 g flour
  • 1 tsp Baking powder
  • 75 g coarsely chopped peanuts
  • 50 g Raisins

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. Line two baking trays with parchment paper. Cream the butter with sugar and brown sugar until fluffy. Beat in the egg, then gradually add the vanilla pulp to the butter mixture. Mix flour and baking powder together and fold gently into the batter.

    Fold in the peanuts and raisins. Using a teaspoon, drop dough balls onto the trays (about 5 cm apart, leaving space from the edges) and bake for 10-12 minutes until golden brown. Let cool on the tray for 5 minutes before transferring to a wire rack to finish cooling completely.
