Ingredients

  • 3 egg whites
  • 500 g powdered sugar
  • 0.5 lemon (juice and zest)
  • 40 g candied orange peel
  • 300 g ground almonds (peeled)
  • flour (for working)
  • soft butter (for the tray)
  • 170 g powdered sugar
  • 3 tbsp orange juice
  • 200 g icing sugar

Instructions

    Beat the egg whites very stiff. Gradually add the powdered sugar, beating until glossy. Then stir in the lemon juice and zest. Finely chop the candied orange peel, mix with the almonds, and fold into the batter. Wrap in foil and chill for 1 hour.

    Preheat the oven to 180 °C fan. Roll out the dough on a floured surface to about 1 cm thickness and cut out moon shapes. Place on a greased baking sheet and bake golden‑yellow for 12 minutes. Let the cookies cool.

    Whisk the powdered sugar with orange juice into a thick glaze, brush over the cookies, and dust with icing sugar.
