Nut-Honey Baklava

Ingredients
- 250 g Yufka pastry sheets (Turkish specialty store)
- 100 g walnut kernels
- 50 g almond kernels
- 50 g pistachio kernels
- 1 Egg white
- 2 tbsp honey
- 0.5 tsp ground cinnamon
- 1 tsp rose water
- 50 g liquid butter
- 125 g sugar
- 2 tbsp lemon juice

Gently separate the pastry sheets, cut to desired size and cover with a damp cloth. Finely grind walnuts and almonds in a hand mill; add pistachios but leave slightly coarser.

Preheat oven to 200°C fan (convection).

Whisk egg white until stiff peaks form; fold in honey, nuts, cinnamon, and rose water. Brush baking dish with butter, then layer alternating pastry sheets and nut mixture, brushing each sheet with butter. Finish with 2-3 pastry sheets on top.

Bake in preheated oven for about 30 minutes. Meanwhile, combine sugar with 125 ml water in a saucepan, bring to boil, simmer for 1 minute, remove from heat, let cool slightly, then stir in lemon juice.

Remove finished baklava from oven and while still hot, drizzle syrup over it gradually. Let cool. Transfer to plate, cut into diamond shapes before serving.
