Mint Jelly with Lime

Ingredients
- 3 untreated limes
- 1 peppermint
- 1 L fruit juice (e.g., apple, pear, light grape)
- 60 g honey (more if desired)
- 12 sheets white gelatin
- mint leaves for garnish

Wash the limes hot and dry them. Slice one lime into thin rounds for garnish and set aside. Grate the zest of the remaining limes and juice them. Rinse the peppermint, then add it with the lime juice and zest to a pot. Pour in the fruit juice and bring to a boil once. Remove from heat, cover, and let steep for about 2 hours.

Soak the gelatin sheets in cold water.

Strain the lime liquid, add honey, and warm slightly. Squeeze out excess water from the gelatin and dissolve it into the mixture while stirring. Pour into four glasses and refrigerate to set for about 3 hours.
