Ingredients

  • 4 eggs
  • 1 tbsp Lemon Juice
  • 100 g sugar
  • 80 g flour
  • 20 g cornstarch
  • 1 tsp Baking powder
  • 20 g cocoa powder
  • 400 g mascarpone
  • 100 ml whipping cream
  • 30 g sugar
  • 1 Tbsp vanilla sugar
  • 30 g cocoa powder
  • 40 ml cold espresso
  • 100 ml whipping cream (whipped stiff)
  • 60 g chocolate biscuits (crushed)
  • Mint leaves

Instructions

    Preheat the oven to 180°C with convection top and bottom heat and line a baking tray (about 30x40 cm) with parchment paper.

    Separate the eggs. Beat the egg whites with lemon juice and half of the sugar until stiff peaks form. Whisk the yolks with the remaining sugar until creamy. Sift together flour, cornstarch, and baking powder. Fold the meringue into the yolk mixture and then sift in the dry ingredients. Gently fold everything together with a spatula. Set aside half of the batter and fold in cocoa powder. Place a strip of aluminum foil in the center of the tray. Spread both sponge batters on the tray and bake for 10-12 minutes, then let cool.

    Whisk mascarpone with whipping cream, sugar, and vanilla sugar until smooth. Fold in about half of the cocoa powder.

    Cut the sponge into four pieces (about 20x15 cm). Place a light sponge layer in a suitable dish, drizzle with ~1 tbsp espresso, and spread a quarter of the cream on top. Add a dark sponge layer, drizzle again with espresso, and spread cream. Repeat twice more. For the final layer, fold remaining cocoa powder into the cream.

    Refrigerate the tiramisu overnight. Before serving, garnish with whipped cream, crushed biscuits, and mint leaves.
