Nut Caramel Pieces Glazed with Chocolate
Chocolate-glazed nut caramel pieces. Delicious cake treat for anyone needing a lot of energy.
Ingredients
- 350 g butter
- 100 g whole grain sugar
- 1 egg yolk
- 275 g wheat flour type 1050
- 400 ml condensed milk (10% fat)
- 60 g honey
- 150 g chopped peanuts
- 230 g dark chocolate (at least 70% cocoa content)
- 2 tbsp Coconut oil

Cream 225 g butter with 50 g sugar and egg yolk, sift in flour and knead into a smooth dough. If needed, grease the baking pan, press the dough flat and bake in preheated oven at 200 °C (convection 180 °C; gas: level 3) for about 25 minutes. Remove from oven and let cool.

Warm remaining butter, add remaining sugar and condensed milk. Stir in honey, bring to a boil and simmer while stirring for 6–8 minutes until everything slowly caramelizes (gold‑brown and thick). Fold in peanuts. Pour over the dough, smooth with an oiled spatula and let cool.

Chop chocolate, melt with coconut oil over a double boiler and let slightly cool. Pour over the almost set caramel, allow to cool, release from pan and cut into small squares while still semi‑firm.
