Ingredients

  • 500 g flour
  • 270 g sugar
  • 4 egg yolks
  • unprocessed lemons (zest)
  • 300 g butter
  • 75 g grated almonds
  • 1 Egg white
  • 50 g chopped hazelnuts
  • 1 egg yolk
  • 1 tbsp condensed milk

Instructions

    Sift the flour onto a work surface, create a well in the center. Add 200g sugar, egg yolks, lemon zest, place butter on the edge of the flour, knead everything together into a ball, wrap in foil and refrigerate for 1 hour.

    Preheat oven to 200°C, line a baking sheet with parchment paper. Roll out the dough and cut out cookies of 5 cm diameter, placing a small amount of almond mixture on each, press them together. Mix the remaining egg yolk with condensed milk and brush over the cookies, sprinkle with chopped hazelnuts, bake in the oven for 15 minutes until golden yellow.
