Ingredients

  • 200 g Flour
  • 1 pinch salt
  • 2 tbsp powdered sugar
  • 1 egg yolk
  • 120 g cold butter
  • 2 Eggs
  • 2 egg yolks
  • 1 can sweetened condensed milk
  • zest of 4 limes
  • 125 ml lime juice
  • 1 starfruit
  • 1 tbsp chopped pistachios
  • powdered sugar (for dusting)

Instructions

    Knead flour, salt, powdered sugar, egg yolk, butter pieces and 2 tbsp cold water quickly into a smooth dough. Wrap in foil and chill for 30 minutes.

    Preheat oven to 200°C (gas: level 3). Roll out the dough. Line a 26 cm pie tin with it. Prick the base. Bake for 15-20 minutes.

    Whisk eggs, egg yolks, and condensed milk until creamy. Stir in lime zest and juice. Pour over the baked base and bake for 30-40 minutes.

    Just before serving slice the starfruit into rounds. Garnish the tart with the slices, sprinkle pistachios, and dust with powdered sugar.
