Ingredients

  • 200 g oats
  • 125 g flour
  • 125 g Brown sugar
  • 125 g cornmeal
  • 1 pinch salt
  • 1 tsp Baking powder
  • 220 g melted butter
  • 1 egg
  • 2 tbsp vanilla sugar
  • 375 g fine brown sugar
  • 180 g honey
  • 180 g soft butter
  • 2 Tbsp whipping cream
  • 250 g unsalted peanuts
  • 1 tsp vanilla essence
  • 250 g chocolate chips

Instructions

    Preheat the oven to 180 °C with upper and lower heat. Line a baking sheet with parchment paper. Mix oats, flour, brown sugar, cornmeal, salt and baking powder. Whisk melted butter and egg together until frothy, then fold in vanilla sugar. Combine everything with the oat mixture and stir into dough. Spread onto the baking sheet, smooth top and bake for about 20‑25 minutes.

    For the topping melt the sugar until golden brown caramelized. Stir in honey, butter and cream and let simmer gently for about 3 minutes. Add peanuts and vanilla essence. Let cool slightly, fold in chocolate chips and spread over the pre-baked base. Cool on a wire rack and then cut into pieces (12 cm × 5 cm).
