Ingredients
- 4 ripe nectarines
- 5 g Butter (1 tsp)
- 400 g blackberries
- 4 egg whites
- 60 g coconut palm sugar (3 tbsp)
- 1 vanilla pod
- 25 g shredded coconut
Instructions

Wash the nectarines, halve them, remove pits and cut flesh into strips.

Lining a baking dish with butter. Rinse the blackberries, dry with a towel, and fill the dish with the berries and nectarines.

Beat the egg whites until very stiff. Split the vanilla pod lengthwise and scrape out the seeds. Mix the vanilla seeds thoroughly with the shredded coconut and fold into the meringue.

Spread the meringue over the fruit and bake in a preheated oven at 200 °C (180 °C fan, gas level 3) for 15–20 minutes. Remove and serve warm.
