- 350 g almonds
- 250 g powdered sugar
- 350 g white couverture chocolate

Blanch the almonds in boiling water for about 5 minutes. Drain, pat dry on a kitchen towel, and cool until they can be handled. Then press the kernels out of their skins and let them dry for about an hour.

Preheat the oven to 200°C (400°F) with upper and lower heat. Spread the almonds on a parchment-lined tray and roast in the oven for about 10 minutes. Remove immediately, lift from the tray, cool, and finely chop in a food processor. Mix with powdered sugar and blend until an oily paste forms.

Melt the couverture chocolate over a double boiler. Combine with the nut paste, pour into a flat pan lined with parchment paper, and chill in the refrigerator until set.
