Ingredients

  • 400 g Norwegian salmon fillet (skinless and boneless)
  • 6 tbsp sake (rice wine)
  • 4 tbsp light soy sauce
  • 4 tbsp white wine
  • 2 tsp mirin
  • 0.5 onion
  • 0.5 celery
  • 2 pickled cucumbers
  • 3 tbsp capers
  • mixed salad greens

Instructions

    Place the salmon in boiling water for 1 minute, then immediately transfer it to ice water to cool quickly.

    Pat the salmon dry, slice thinly, and arrange on a serving platter.

    Combine the liquid ingredients for the sauce.

    Finely chop onion, celery, and pickled cucumbers and add them with capers to the sauce.

    Serve the salmon drizzled with some sauce and place the remaining sauce in a small bowl. Garnish with salad greens.
