Ingredients

  • 600 g Norwegian salmon fillet (skinless and boneless)
  • 1 Red Onion
  • 1 red bell pepper
  • 0.5 leek
  • 1 Carrot
  • 0.5 Zucchini
  • 8 Cherry tomatoes
  • 3 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp Oregano
  • Salt
  • Pepper
  • sour cream (light or crème fraîche)

Instructions

    Preheat the oven to 200°C.

    Cut the salmon fillet into portions.

    Quarter the onion and dice the bell pepper. Slice the leek, carrot, and zucchini into rounds.

    Combine olive oil, vegetables, and herbs in a bowl. Pour a few tablespoons of water over the mixture and transfer it to an ovenproof dish.

    Place the salmon on top and cover with aluminum foil.
