Ingredients

  • 4 stalks leek
  • Salt
  • 200 g sliced cooked ham
  • 100 ml heavy cream (35% fat)
  • 100 ml meat broth
  • 150 g crème fraîche
  • 2 Eggs
  • 100 g shredded cheese (e.g., Gruyère)
  • black pepper (ground)
  • nutmeg
  • dill for garnish

Instructions

    Preheat the oven to 180°C (convection 160°C; gas: level 2-3).

    Wash, trim, and cut the leeks lengthwise into halves or thirds. Blanch in boiling salted water for 2–3 minutes, then shock in cold water. Wrap each leek with 1–2 slices of ham and place in a baking dish.

    Whisk together cream, broth, crème fraîche, eggs, and cheese; season with salt, pepper, and nutmeg. Pour over the leeks and bake for 25–30 minutes until golden brown. Serve garnished with dill.
