Nori Rolls with Rice Filling

Ingredients
- 2 Tomatoes
- 400 ml Vegetable broth
- 2 tbsp Soy sauce
- 1 pinch ground coriander
- 200 g round-grain rice
- 1 Avocado
- 1 tart apple
- Cayenne pepper
- 4 lettuce leaves (from the heart)
- 4 nori sheets
- garden cress (for garnish)
Instructions

Boil the tomatoes, shock them, peel, quarter, core and dice. Bring to a boil with vegetable broth and add 1 tbsp soy sauce. Season with coriander, sprinkle in the rice and let it simmer covered over low heat for about 25 minutes until cooked.

Meanwhile, peel the avocado, halve it, remove the pit and slice into thin rounds. Wash the apple, quarter it, remove the core and cut the quarters into thin strips.

Season the rice with soy sauce and cayenne pepper. Rinse the lettuce, clean and shake dry. Place the rice, avocado and apple on the nori sheets and roll them into a pouch. Serve garnished with garden cress.
