Spinach Salad with Sesame
The spinach salad with sesame offers an ideal way for vegetarians to replenish their iron stores.
Ingredients
- 500 g frozen spinach leaves
- 1 tbsp peeled sesame seeds
- 2 Spring Onions
- 5 tbsp classic vegetable broth
- 3 tbsp light soy sauce
- 1 tbsp Sesame oil
- 0.5 tsp Sugar
- salt to taste
- 0.5 Organic lemon
Instructions

Place spinach in a pot and cook according to package instructions.

While the spinach cooks, toast the sesame seeds in a dry pan until lightly brown. Remove from heat, transfer to a plate, and let cool.

Trim and wash the spring onions, then slice them into thin rings.

Whisk together broth, soy sauce, sesame oil, and sugar to make a dressing.

Drain the cooked spinach in a colander, rinse with warm water, and allow it to cool slightly.

Add the cooled spinach to the dressing along with the sliced spring onions, mix well, and season with salt.

Slice half a lemon into thin wedges. To serve, arrange the salad on plates, sprinkle with toasted sesame seeds, and garnish with lemon wedges.
