Ingredients

  • 200 g small onions
  • 50 ml dark balsamic vinegar
  • 100 ml broth
  • 1 tbsp brown sugar
  • Salt
  • 500 g (firm-cooking) potatoes
  • some lettuce leaves
  • 80 g soft butter
  • 1 tbsp Medium-hot mustard
  • freshly ground pepper
  • 8 slices whole-grain toast
  • 600 g veal fillet
  • 6 tbsp plant oil
  • 200 g Noord Hollander Premium Gouda (Creamy Spicy)
  • small wooden skewers

Instructions

    Peel onions and slice into thin rings. Bring vinegar, broth, sugar and 1/2 tsp salt to a boil. Add onions, bring back to a boil and reduce until the onions are coated with the liquid.

    Whisk butter and mustard together, season with salt and pepper, and spread on toast slices. Pat veal fillet dry, slice into ~1 cm thick pieces, season with salt and pepper, and sear in 2 tbsp heated oil for about 4 minutes per side. Slice cheese. Cut potatoes into very thin sticks using a food processor or vegetable slicer, pat dry, and crisp them golden brown in the remaining heated oil.

    Layer 4 toast slices with veal fillet, onions, lettuce and cheese. Place the remaining toast slices on top, press lightly, cut diagonally, and secure with small wooden skewers. Arrange sandwiches with potato sticks on a plate and serve.
