Noodle Sausage Salad

A fresh noodle salad with macaroni, frozen peas, pink grapefruit, celery stalks, meat sausage, cornichon, salad mayonnaise, lemon juice, salt, ground pepper and sugar. Seasoned with a pinch of sugar, pink peppercorns and served with Spoonsparrow.

Ingredients

  • 250 g macaroni
  • Salt
  • 100 g frozen peas
  • 1 pink grapefruit
  • 4 celery stalks
  • 100 g meat sausage
  • 1 cornichon
  • 250 g salad mayonnaise
  • lemon juice from one lemon
  • ground pepper
  • 1 pinch sugar
  • 100 g meat loaf cheese
  • 1 tsp chopped pink peppercorns

Instructions

    Cook macaroni according to package instructions in plenty of boiling salted water until al dente. Drain, rinse with cold water and set aside. Blanch peas in boiling salted water for 1 minute, drain, rinse with cold water and set aside.

    Peel and segment the grapefruit, catching the juice. Wash and finely chop celery stalks. Slice meat loaf cheese into strips. Cut cornichon into strips as well.

    Whisk salad mayonnaise with lemon juice. Season with salt, pepper and sugar to taste. Mix the noodles with the dressing. Gently fold in the prepared ingredients.

    From the fresh cheese, poke two teaspoons of holes and sprinkle with pink peppercorns. Arrange the salad on a plate and serve with the fresh cheese holes on top.
