Noodle Salad

Ingredients

  • 250 g horn-shaped noodles
  • Salt
  • 250 g Cherry Tomatoes
  • 1 small zucchini
  • 1 Carrot
  • 100 g white mushrooms
  • 4 tbsp white wine vinegar
  • ground pepper
  • 1 pinch sugar
  • 5 tbsp olive oil
  • 1 Garlic clove
  • 40 g chopped pistachios
  • 2 tbsp basil

Instructions

    Cook noodles according to package instructions in salted water until al dente.

    Rinse cherry tomatoes and halve them. Rinse zucchini and dice it into small pieces. Peel carrot and cut into fine strips. Clean mushrooms, trim them and slice into rounds.

    Whisk vinegar with salt, pepper, sugar and olive oil. Separate garlic clove and squeeze its juice in. Drain noodles, rinse with cold water and let them drain well. Mix noodles with the dressing and prepared ingredients. Fold in pistachios and basil leaves gently.
