Ingredients

  • 500 g cannelloni
  • 2 Zucchini
  • 3 Carrots
  • 1 cup crème fraîche
  • 2 tbsp yogurt
  • 1 tbsp chopped coriander
  • 1 tbsp chive ribbons
  • Salt
  • Pepper (freshly ground)
  • coriander leaves for garnish

Instructions

    Cook the cannelloni in salted water until al dente.

    Wash, peel and cut the zucchini into sticks. Peel the carrots and cut them into sticks as well. Place the carrots in a steamer basket and steam for about 2 minutes; add the zucchini and steam together for another 1–2 minutes until just tender.

    Whisk the crème fraîche with yogurt, add the herbs, and season with salt and pepper. Divide the mixture into four small bowls and place the drained cannelloni inside. Fill each roll with the vegetable mixture and garnish with coriander leaves before serving.
