Noodle Casserole

Ingredients
- 400 g tomatoes (1 can)
- 125 ml Vegetable broth
- 150 g spiral pasta
- 2 stalks leeks
- Salt
- Pepper (freshly ground)
- 1 tbsp butter
- 1 tbsp flour
- 125 ml milk
- 100 g yogurt
- 1 egg yolk
- 1 tsp Dried oregano
- 4 basil leaves
Instructions

Add tomatoes and broth to a pot. Crush the tomatoes and bring to a boil. Add pasta and cook covered according to package instructions until al dente, seasoning with salt and pepper.

Meanwhile clean, wash, and slice leeks into rings. Blanch in boiling salted water for about 5 minutes, then drain and set aside.

Pour the noodle-tomato mixture into a baking dish. Distribute the leeks over it.

Heat butter in a saucepan over low heat, whisk in flour until lightly browned. Pour in milk and thicken at medium heat for 1-2 minutes while stirring. Remove from heat and stir in yogurt and egg yolk, seasoning with salt, pepper, and oregano. Pour sauce over the leeks.

Bake in preheated oven at 200°C (400°F) for about 25 minutes until golden yellow. Serve garnished with basil.
