Macaroni Casserole

Ingredients
- 2 onions
- 2 tbsp clarified butter
- Salt
- 400 g macaroni
- 250 g Gruyère cheese
- Pepper (freshly ground)
- 150 g heavy cream
- 300 ml milk
- butter (for the dish)

Peel and halve the onions, then slice into thin half-rings. Heat the clarified butter in a pan and sauté the onions until they are lightly browned.

Bring plenty of salted water to a boil. Cook the macaroni for about 10 minutes until al dente. Preheat the oven to 220°C (425°F).

Grate the cheese. In a saucepan, combine cream and milk and bring to a simmer. Add half of the grated cheese and stir until melted. Remove from heat.

Grease a baking dish with butter. Drain the macaroni, let it dry, then place in the dish. Mix in the remaining cheese, salt, and pepper.

Pour the cheese sauce over the pasta and bake for about 10 minutes until the cheese is bubbly and golden. Remove from oven, top with browned onions, and serve immediately with a salad.
