Ingredients
- 1 small head of lettuce
- 1 green bell pepper
- 6 tomatoes
- 4 hard-boiled eggs
- 1 bunch spring onions
- 1 small jar anchovies (in oil)
- 100 g black olives (wrapped in anchovies)
- 2 garlic cloves (peeled)
- juice of one lemon
- Salt
- Pepper (freshly ground)
- 6 tbsp Olive oil
Instructions

Wash the bell pepper, halve it, remove seeds and cut into thin strips.

Wash the tomatoes, pat dry and quarter them.

Wash the spring onions, trim them, split lengthwise and slice crosswise into fine strips.

Wash the lettuce, remove the core and spin dry.

Peel the eggs and quarter them.

Mix the ingredients for the vinaigrette, season with salt and pepper.

Arrange the leafy salad on a large plate or four small plates and decorate with tomatoes, bell pepper, spring onions, eggs and olives wrapped in anchovies. Drizzle with the vinaigrette and serve.
