Nizza Salad
A fresh salad featuring tuna and vegetables from the sea fish category. Try this and other recipes from Spoonsparrow!
Ingredients
- 2 cans tuna (in own juice)
- 5 cooked potatoes (from yesterday)
- 1 large white onion
- 4 tomatoes
- 200 g Green beans
- 1 can anchovy fillets
- 0.5 head lettuce
- 200 g black olives
- 2 hard-boiled eggs
- 3 tbsp olive oil
- 2 tbsp wine vinegar
- Salt
- pepper (ground)
- 1 tbsp chopped parsley

Take tuna from the can, drain and flake it. Peel potatoes and cut into cubes. Peel onion and slice into thick rings. Wash tomatoes, halve them, remove stems, and quarter. Rinse beans, trim ends, blanch in boiling salted water for 15 minutes, then drain.

Remove anchovy fillets from the can, pat dry on kitchen paper, and cut into small pieces. Wash lettuce, clean, and spin dry. Peel eggs and quarter them. Whisk together oil, vinegar, salt, pepper, and parsley to make a dressing. Drizzle tomatoes, onions, beans, potatoes, olives, tuna, and anchovies with the dressing and mix well. Arrange the salad on lettuce leaves and garnish with egg pieces.
