Nizza Salad

Ingredients
- 1 head iceberg lettuce
- 200 g Green beans
- 1 stalk Celery
- 2 Tomatoes
- 1 Red Onion
- 200 g canned tuna (in own juice)
- 3 tbsp white wine vinegar
- 0.5 tsp mustard
- 1 pinch sugar
- Salt
- Pepper (freshly ground)
- 5 tbsp olive oil
- 80 g Black olives
- 1 tbsp capers

Wash, trim and cut the lettuce into bite-sized pieces; set aside. Rinse the beans, trim ends, blanch in boiling salted water for about 8 minutes, drain, shock in ice water, then drain again. Wash the celery, trim, and slice thinly. Wash tomatoes, quarter, seed, and cut into strips. Peel the onion, halve, and slice into strips. Drain the tuna and flake it.

Combine vinegar, mustard, sugar, salt, and pepper; whisk in olive oil until emulsified. Toss the prepared salad ingredients with olives and capers, then drizzle the dressing over the top and mix gently before serving.
