New potatoes with spring quark from Spoonsparrow are a simple recipe that provides plenty of high-quality protein.
Ingredients
- 600 g new potatoes
- 1 kg low-fat quark
- 5 tbsp milk
- 1 bunch spring onions (small)
- 1 bunch radishes
- 2 Garlic cloves
- 1 bunch chives
- 1 bunch parsley
- 1 box watercress
- Salt
- Pepper

Wash the potatoes and cover them loosely with water. Cook for 30 minutes.

Whisk the quark with milk until smooth. Clean and slice the spring onions diagonally into rings. Wash the radishes, remove the greens, roughly chop, and add to the quark with the spring onions. Peel and press in the garlic cloves. Wash, finely chop, and mix in the chives and parsley. Sprinkle the watercress on top. Season everything with salt and pepper. Drain the potatoes and add them to the mixture.
