Ingredients

  • 400 g flour
  • 6 Eggs
  • 30 g yeast
  • 200 g butter
  • 150 g sugar
  • 250 ml milk
  • 50 g Raisins
  • powdered sugar (for dusting)
  • butter (for the pan)
  • breadcrumbs (for the pan)

Instructions

  1. 1.

Warm the milk slightly and dissolve the yeast in it, then stir in half of the flour. Let the pre‑mix rise at a warm place until doubled.

  2. 2.

Separate the eggs; beat the whites stiffly. Beat butter with sugar until fluffy, gradually adding the yolks and whipping to a creamy consistency.

  3. 3.

Preheat the oven to 190°C. Mix the pre‑mix into the foam mixture, add the remaining flour and stir well. Fold in the beaten egg whites and raisins. Pour the dough into a greased and floured Napfkuchen pan and bake for about 50 minutes.

  4. 4.

Remove, turn out onto a plate, let cool, then dust with powdered sugar before serving.
