Ingredients
- 2 tbsp butter
- 1 tbsp spelt whole‑grain flour
- 125 ml Vegetable broth
- 300 ml whipping cream
- 200 ml fish stock
- 2 tbsp coarse mustard
- Salt
- 1 tbsp Lemon Juice
- 1 tbsp finely chopped tarragon

In a saucepan, lightly brown 1 tbsp butter with the flour. Whisk well and deglaze with vegetable broth, bring to a boil and simmer for a few minutes.

Add half of the cream and the stock, stir and bring to a boil, then let it simmer gently for about 10 minutes. Season with mustard, salt, and lemon juice. Beat the remaining cream until semi‑firm, fold into the sauce, and finish with tarragon.
