Ingredients
- 1 bundle parsley
- herb (kerbel)
- pimpinelle
- 4 egg yolks (size M, hard-boiled)
- 1 tbsp vinegar
- 1 tbsp Lemon Juice
- 1 tsp medium-hot mustard
- 200 g Sour Cream
- 200 g crème fraîche
- Salt
- ground pepper
- a pinch sugar
- 250 g roast beef cut
Instructions

Rinse and dry the herbs. Finely chop parsley, kerbel, and pimpinelle; slice chives into fine rings.

Halve the eggs, scoop out the yolks, and place them in a bowl. Gradually whisk in vinegar, lemon juice, and mustard to form a homogeneous cream.

Stir in sour cream and crème fraîche. Season with salt, pepper, and sugar. Fold in the herbs.
