Mushroom Bulgur

Ingredients
- 1 onion
- 100 g butter
- 350 g bulgur
- 850 ml vegetable broth
- 250 mixed mushrooms (e.g., button, oyster, wild)
- 2 tbsp chopped parsley
- 1 tbsp Olive Oil
- Salt
- ground pepper
- 50 g almond slivers
- 50 g chopped hazelnuts

Peel and finely chop the onion. Heat half the butter in a pot and sauté the onion until translucent; then stir in the bulgur and cook for a few minutes. Add the broth, bring to a boil, cover, and simmer 10–15 minutes until liquid is absorbed.

Meanwhile, clean the mushrooms and slice them thinly.

Heat olive oil in a pan, fry the mushrooms until soft and lightly browned. Season with salt and pepper. Add the mushroom juice to the bulgur pot, close again, and continue cooking.

Toast almonds and hazelnuts in a dry pan until fragrant; then stir them together with the remaining butter, nuts, and parsley into the bulgur. Taste and serve.
