Mulled Wine Cookies
Christmas dessert: Mulled wine cookies by Spoonsparrow are perfect for gifting, bringing and snacking.
Ingredients
- 400 g spelt flour (type 1050)
- 1 packet baking powder
- 150 g coconut sugar
- 0.5 Vanilla bean
- Pinch of salt
- 250 g butter
- 2 egg whites
- 150 g ground hazelnuts
- 120 ml alcohol‑free red wine
- 0.33 tsp agar‑agar
- 60 g Honey (4 tbsp)
- 1 sachet mulled wine spice mix
- 0.5 cinnamon stick

Scrape the vanilla bean pulp. Knead flour, baking powder, coconut sugar, vanilla pulp, salt, butter pieces, egg whites and ground hazelnuts into a ball, wrap it and refrigerate for 30 minutes.

Bring alcohol‑free red wine with mulled wine spice mix, cinnamon stick, honey and agar‑agar to a boil and simmer for about 4 minutes. Perform a gel test and let cool; then remove the spices.

Roll out the dough on a floured surface to about 0.4 cm thickness and cut star‑shaped cookies of various sizes with a star cutter. Cut additional stars from some cookies in the center. Place the stars on parchment paper lined baking sheet and bake at 180 °C (160 °C fan, gas 2–3) for about 12 minutes until lightly golden brown. Remove and let cool slightly. Spread mulled wine jelly on half of the cookies, place a different star on each, press gently. Dust with powdered sugar if desired.
