Lebkuchen Figures

Ingredients
- 250 g honey
- 250 g cane sugar
- 150 g butter
- 100 g Ground Almonds
- 400 g flour
- 1 tsp cinnamon
- 2 tsp gingerbread spice
- 1 tbsp grated lemon zest
- 1 tbsp cocoa powder
- 1 egg
- 1 tsp potash
- 20 ml rum
- 150 g powdered sugar
- 1 tbsp Lemon Juice
- 1 Egg white

Heat honey, sugar and butter in a saucepan while stirring until the sugar dissolves, transfer to a mixing bowl and let cool.

Add egg, almonds, flour and all spices to the sugar mixture and knead thoroughly with the beaters of the mixer.

Stir potash with rum, add to the dough and continue kneading until the dough shines and no longer sticks; if necessary, add a little more flour.

Cover the bowl with plastic wrap and refrigerate overnight.

Roll out portions of the dough on a lightly floured surface to about 0.5 cm thickness, cut out owl and acorn shapes. Place the gingerbread hearts on a baking sheet and bake in a preheated oven at 180°C for about 18 minutes. Carefully lift them from the tray (they are still very soft), set on a cooling rack and let cool.

Beat the egg white with lemon juice until very stiff, fold in powdered sugar while continuing to beat until a glossy, firm mass forms; transfer to a freezer bag, cut a small corner and decorate the gingerbread.
