Ingredients

  • weiche Butter (für das Blech)
  • weiche Mehl (für das Blech)
  • 250 g Mehl
  • 2 TL Backpulver
  • 2 Eier
  • 75 g Zucker
  • 1 EL Vanillezucker
  • 80 g Pflanzenöl
  • 200 g Naturjoghurt
  • 50 ml espresso
  • 300 ml Schlagsahne
  • 2 EL Vanillezucker
  • 1 TL Espressopulver (Instant)
  • Kakaopulver (zum Bestauben)

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. Grease the muffin tin and dust it with flour.

    In a bowl, mix the flour with baking powder. In another bowl whisk the egg with sugar, vanilla sugar, oil, yogurt, and espresso until smooth. Gradually fold in the dry mixture until all ingredients are moist. Spoon the batter into the muffin cups and bake for about 25 minutes. Let cool.

    Whip the cream stiffly and fold in vanilla sugar and instant espresso powder. Drop a spoonful onto each muffin and dust with cocoa before serving.
